Slammin’ Tabbouleh Salad
Of course on this blog, I get to share recipes of the foods I love that are not only good and flavorful, but are healthy at that. Here’s a quick snack below that takes roughly 15 minutes to prepare
I LOVE making this salad! It’s sold in many grocery stores but fresh is always better. This can be served with pita chips, hummus, greek yogurt or eaten alone.
1 box of couscous or bulghur wheat
1 1/2 cups of boiling water
2 bushes of parsley chopped
2 tomatoes chopped
1 purple onion chopped
1 cucumber skinned(optional) and chopped
10 sprigs of mint chopped
1/4 cup of olive oil
juice of 2 lemons
salt and pepper to taste
red pepper flakes(optional)
crushed toasted pita chips(can be found at local grocery store or just toast some pita bread and crumble in a bag)
Prepare the couscous in a bowl by pouring the boiling water over it so that it is covered completely. Let the water soak in and set it aside to cool. Mix the parsley, tomato, onion, cucumber, and mint in another bowl. Pour the olive oil and the lemon juice over the veggie mixture. Fluff the couscous with a fork and stir in the couscous over the veggie mixture. Add more oil and/or lemon juice and season with salt and pepper to taste. I like mine slightly acidic so I tend to add more lemon juice. Add the red pepper flakes and garnish with crushed pita chips and lemon peel. Enjoy!
